Shrimp and Pork Wontons

Ingredients

Wontons

  • 1 pound ground pork
  • 6-8 shrimp peeled and de-veined
  • 1 green onion sliced
  • 1 teaspoon minced ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon oil light olive oil or any neutral oil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • ¼ teaspoon white pepper
  • ½ teaspoon chicken bouillon
  • 3 tablespoons water
  • 1 egg
  • 1 pack wonton skins
  • 3-6 cups water to boil wontons
  • 3-4 sprigs cilantro for garnish
  • roasted sesame seeds for garnish

Spicy Sauce

  • 1 teaspoon hot chili oil Lao gan ma or your own chili oil
  • 2 tablespoons soy sauce
  • 2 garlic cloves minced finely
  • 1 tablespoon vegetable oil
  • ½ tablespoon sugar
  • 1 teaspoon rice vinegar

Instructions

Shrimp and Pork Wontons

  • Cut 8-10 shrimp in small pieces. Slice 1 green onion. Start the filling by adding ground pork, shrimp, green onion, minced ginger, 2 tablespoons soy sauce, 1 tablespoon oil, 1 teaspoon sugar, 1 teaspoon salt, ¼ teaspoon white pepper, ½ teaspoon chicken bouillon, 3 tablespoons water, and 1 egg in a bowl. Mix the filling in one direction (makes the filling juicier) to help myosin development. Mixing in one direction for 100 times is a good measurement to ensure its mixed well ◡̈
  • Fill a small bowl with little bit of water. Add water to all sides of the wonton wrapper. Add ½ tablespoon filling to the center. Fold in a triangle, then fold the sides to the center and press hard to close.
  • Add water in a pot and heat pot to medium-high heat. Once the water starts boiling, add wontons to the pot and cook for 8-10 minutes. The wontons are done when they float to the top.

Spicy Sauce

  • To make the sauce, add 1 teaspoon chili oil, 2 tablespoon soy sauce, 2 minced garlic cloves, ½ tablespoon sugar, and 1 teaspoon rice vinegar in a bowl. Heat 1 tablespoon vegetable oil in a pot or pan until you see that there is smoking coming out. You want the oil to be really hot!! Add hot vegetable oil to the sauce and mix everything together.
  • Dip your wontons in the spicy sauce. You can garnish wontons with sesame seeds, green onion and cilantro. Hope you enjoy!
