Turkish Style Eggs with Garlic Yogurt Sauce

Ingredients

garlic yogurt sauce

  • 1 cup yogurt whole milk
  • 2 tablespoon ricotta optional
  • 1 garlic grated
  • salt and pepper to taste

butter sauce

  • 2 tablespoon unsalted butter
  • ½ teaspoon salt
  • 1 teaspoon red chili flakes
  • ½ teaspoon paprika
  • 1 tablespoon olive oil

assemble

  • garlic yogurt sauce
  • butter sauce
  • 3-4 eggs soft-boiled
  • fresh dill to garnish
  • sliced bread toasted to serve

Instructions

  • Heat water in the pot on medium heat. Add enough water to ensure eggs will be covered. Once the water is boiling, add 3 eggs to the water and boil for 7 minutes. Transfer eggs to ice bath immediately after 7 minutes for soft boiled eggs. Tip: cold eggs from the fridge may crack during boiling. Add them to warm water to temper the eggs before adding to boiling water to prevent cracking.

  • Make butter sauce by melting 2 tablespoons unsalted butter in a pan on medium heat. Once the butter starts to brown (it takes 1-2 minutes), add ½ teaspoon salt, 1 teaspoon red chili flakes, and ½ teaspoon paprika. Mix continuously and cook for 1 minute. Turn off heat and add 1 tablespoon olive oil and mix well. Let this cool.

  • Step 3. Make yogurt sauce by mixing the following ingredients: 1 cup yogurt, 2 tablespoon ricotta, grated garlic, and salt and pepper. Mix until smooth and set aside.

  • Peel eggs and cut in half carefully. To assemble the plate, add a layer of yogurt on a plate. Next, add the eggs on top of the yogurt and drizzle the butter sauce generously on top of yogurt and eggs. Top with dill. Dip the eggs and yogurt with toasted bread for the best result!
