Heat pan to medium heat and once hot, add 2 tbs oil. Add onion and garlic. Next, add diced carrots and peas. Saute for 1 minute.
Next, add cooked rice (leftover rice works best!) to the pan and break apart the rice. Once the rice looks cooked and broken apart, you can add seasoning!
Add soy sauce, ketchup and sugar and mix well. You can also add cooked protein (I added chicken) if you like! There's not a huge change of flavor if you don't add any protein ◡̈ Set rice aside.
Whip 3 eggs with milk, salt and chicken bouillon until there's no egg white visible. This makes the omelette really smooth and pretty!
Heat non-stick pan on low heat. Then add slice of butter. Gently add the eggs in the pan until the pan is covered.
Add a lid on the pan and cook for 3 to 4 minutes or until the egg is cooked through.
To assemble, add 1 cup of the fried rice to the omelette. Fold the sides and gently turn over.
Top with ketchup or demi-glace sauce! Hope you enjoy!
