Omurice (Japanese Rice Omelette)

Delicious fried tomato rice wrapped in an egg omelette topped with gravy!

Ingredients

fried rice

  • 2 cups cooked rice leftover rice is best
  • ¼ onion minced
  • ½ tablespoon garlic
  • ¼ cup frozen peas
  • 1 small carrot
  • 3 tablespoons ketchup
  • 1 teaspoon sugar
  • 1 tablespoon soy sauce
  • ½ cup cooked chicken or choice of protein
  • 2 tablespoon oil

omelette (for 1 omelette)

  • 3 eggs
  • 1 tablespoon milk
  • ¼ teaspoon salt
  • ¼ teaspoon chicken bouillon can sub with ¼ teaspoon salt

Instructions

  • Heat pan to medium heat and once hot, add 2 tbs oil. Add onion and garlic. Next, add diced carrots and peas. Saute for 1 minute.
  • Next, add cooked rice (leftover rice works best!) to the pan and break apart the rice. Once the rice looks cooked and broken apart, you can add seasoning!
  • Add soy sauce, ketchup and sugar and mix well. You can also add cooked protein (I added chicken) if you like! There's not a huge change of flavor if you don't add any protein ◡̈ Set rice aside.
  • Whip 3 eggs with milk, salt and chicken bouillon until there's no egg white visible. This makes the omelette really smooth and pretty!
  • Heat non-stick pan on low heat. Then add slice of butter. Gently add the eggs in the pan until the pan is covered.
  • Add a lid on the pan and cook for 3 to 4 minutes or until the egg is cooked through.
  • To assemble, add 1 cup of the fried rice to the omelette. Fold the sides and gently turn over.
  • Top with ketchup or demi-glace sauce! Hope you enjoy!
