Korean Crab Jeon (Omelette)

- ½ package imitation crab
- ½ onion diced
- 1 garlic minced
- 3-4 large eggs add more egg if you like
- 2 green onions chopped
- ¼ red bell pepper diced
- 1 pack chives chopped in 3 inches lengthwise
- 1 jalapeno diced
- 12-17 shrimp peeled and de-veined
- ½ cup flour or korean pancake mix
- ¼ cup water
- pinch of salt and pepper
- 2-3 tablespoon cooking oil vegetable or canola oil

Shred crab sticks with two forks in a bowl.
In a bowl, combine crab, onion, garlic, eggs, green onions, red bell pepper, chives, jalapeno, flour, water, salt and pepper. Mix until well combined.
Heat saucepan or skillet on low-medium heat. Once pan is hot, add oil. Add 2 tbs mixture to the pan and place 1 shrimp on top. Cook for roughly 3 minutes on each side or until batter is golden brown.

- imitation crab meat can be substituted with real crab meat if preferred
