Korean Crab Jeon (Omelette)

Ingredients

  • ½ package imitation crab
  • ½ onion diced
  • 1 garlic minced
  • 3-4 large eggs add more egg if you like
  • 2 green onions chopped
  • ¼ red bell pepper diced
  • 1 pack chives chopped in 3 inches lengthwise
  • 1 jalapeno diced
  • 12-17 shrimp peeled and de-veined
  • ½ cup flour or korean pancake mix
  • ¼ cup water
  • pinch of salt and pepper
  • 2-3 tablespoon cooking oil vegetable or canola oil

garnish

  • kimchi
  • chopped chives
  • sesame seeds

Instructions

  • Shred crab sticks with two forks in a bowl.
  • In a bowl, combine crab, onion, garlic, eggs, green onions, red bell pepper, chives, jalapeno, flour, water, salt and pepper. Mix until well combined.
  • Heat saucepan or skillet on low-medium heat. Once pan is hot, add oil. Add 2 tbs mixture to the pan and place 1 shrimp on top. Cook for roughly 3 minutes on each side or until batter is golden brown.
  • Serve with rice and kimchi! Hope you enjoy!
