Instructions

  • Heat pan to medium heat and once hot, add 2 tbs oil. Add onion and garlic. Add sliced chicken with some salt and pepper. Cook for 1 minute and mix together.
  • Add the cooked rice (leftover rice works best!) to the pan, break it apart, and allow it to cook. Add carrots, peas, soy sauce, butter, and ketchup to the pan. Mix it well. Set the fried rice aside while you make the omelette.
  • Whip the eggs with the cream, salt and chicken bouillon until there's no egg white visible. This makes the omelette really smooth and pretty!
  • Add a slice of butter to a non-stick pan over low heat. Gently add the eggs to the pan until the pan is covered. Cover the pan with a lid and cook for 2-3 minutes or until the egg is cooked through.
  • Add omelette to the fried rice. Fold the sides and gently turn over. Top with ketchup or demi-glace sauce! Hope you enjoy!

Notes

    • Adding Protein: This is completely optional and there's not a huge change of flavor if you don't add any protein but it does make the dish a bit more filling due to the added protein.
    • Use Leftover Rice: This is crucial to a fluffy Japanese omelette rice. Leftover rice is drier than recently cooked rice which gives your fried rice a much better texture.
    • Storing: Enjoy your Japanese rice omelette freshly made for the best flavor. If you happen to have leftovers and don't want to waste you can store it in the fridge for up to three days. Reheat it in the microwave in short intervals until heated through.
    • Smooth Omelette: After whisking your eggs, you can put it through a strainer. This will ensure your eggs will be extra soft and smooth.
