Instructions
Melt two melona popsicles. Mix with the glutinous rice flour until the texture is smooth for the mochi mixture.
Cover the mochi mixture with a lid and microwave for 1 minute. Stir the mixture and put it back in the microwave for one more minute. Stir again and form mochi in a ball.
On a flat surface, sprinkle some potato starch and add the mochi on top of the starch. Sprinkle with a little more potato starch to prevent the mochi from sticking.
Flatten the mochi and cut into squares.
To make the strawberries and creme filling, whip heavy whipping cream and add sugar gradually until stiff peaks form. Cut strawberries in small pieces and mix with the whipped cream.
Scoop the cream in bite sized pieces on the plate. Then freeze for minimum of 15 minutes.
Add the cream in the mochi and fold the sides and pinch the mochi shut. Hope you enjoy!
