One Pot Kimchi Fried Rice With Spam

Add rice, spam, kimchi, and this garlic gochujang sauce to your rice cooker to make this one pot meal

kimchi fried rice with spam

  • cup short grain rice soaked in water
  • 3 garlic cloves minced
  • ½ can spam (light sodium preferred)* diced
  • ½ cup sour kimchi chopped
  • 1 tablespoon gochujang (red pepper paste)
  • 2 tablespoon kimchi juice
  • ½ tablespoon gochugaru (korean red pepper flakes)
  • ½ tablespoon sugar
  • ½ tablespoon fish sauce can substitute with soy sauce
  • cup water
  • ½ tablespoon unsalted butter optional but recommended

garnish

  • 1 teaspoon sesame oil
  • 1 green onion sliced
  • roasted seaweed
  • sesame seeds
  • fried eggs optional but recommended

Instructions

  • Soak 1 cup short grain rice with 2 cups water. Soaking the rice in water helps soften the rice as short grain rice can be hard in the center if not soaked. Soak the rice as long as it takes for you to prep the sauce, kimchi and spam.
  • Cut kimchi and spam in small pieces. Mince garlic finely.
  • To make the sauce, mix together 1 tablespoon gochujang, 2 tablespoon kimchi juice, ½ tablespoon red pepper powder, ½ tablespoon sugar and ½ tablespoon fish sauce (can substitute with soy sauce).
  • Wash the soaked rice in a strainer (or in the same bowl you used before) until water runs clear. Make sure your strain all the water to ensure that you add the right amount of water in the next step. The water should barely cover the surface of the rice.
  • In the pot with rice, add chopped spam, chopped kimchi and minced garlic. Add the sauce from step 3 and mix everything together. Lastly, add 1 ¼ cup water and slice of butter. Place pot in rice cooker and press the cook button. If you don’t have a rice cooker, use the alternative cooking instructions below.
  • When the rice is done cooking, add sliced green onions. This is optional, fry sunny side eggs on a pan and place on top of the rice. Garnish with a teaspoon of sesame oil, roasted seaweed, and sesame seeds. Hope you enjoy!

Notes

*Substitution for spam, use 6 ounces of cooked protein of your choice
Tip: If your kimchi is making the rice taste too sour, add 1 teaspoon sugar to the rice and mix well.
StoveTop Cooking Instructions (if you don't have a rice cooker)
Follow cooking instructions up until Step 6 of using a rice cooker. Use a pot and follow directions below.
  1. Heat pot to medium and cook for 5-7 minutes covered with a lid. The water will start boiling. Make sure to watch over the fire because the water might boil over ◡̈
  2. After 5-7 minutes, turn heat to low and cook for 10 more minutes covered. Do not open the lid during the entire cooking process.
  3. Then turn off the heat and do not open the covered pot. Leave for 15-20 minutes covered. After the 15-20 minutes is up, mix the rice well. Garnish with sliced green onions, sesame seeds, sesame oil and a fried egg (optional). Hope you enjoy with some roasted seaweed.
