Budae Jjigae

Budae Jjigae is a spicy stew wil spam, sausage, tofu and instant ramen!

Ingredients

  • ¼ tofu sliced
  • spam sliced
  • 1 smoked sausage sliced
  • ¼ cup kimchi
  • 3 cups chicken or anchovy broth unsalted
  • ½ cup rice cakes
  • 1 instant ramen without seasoning
  • 1 slice of cheddar cheese or shredded cheddar
  • 1 green onion sliced

Sauce

  • 1 tablespoon red pepper powder gochugaru
  • 1 tablespoon red pepper paste gochujang
  • ½ tablespoon soy sauce
  • ½ tablespoon fish sauce
  • ½ tablespoon sugar
  • 2 garlic minced
  • ½ teaspoon black pepper

Instructions

  • Prepare your ingredients. Slice tofu, sausage, and spam. Next, mince your garlic. Soak rice cakes in water while preparing your seasoning sauce. Mince garlic and slice green onions.
  • Mix sauce by adding all sauce ingredients: gochugaru, gochujang, soy sauce, fish sauce, sugar, minced garlic and black pepper until well combined.
  • Add sliced soft tofu, sliced spam, sliced smoked sausage, ¼ cup kimchi, 3 cups of broth, ½ cup rice cakes and sauce in the pot. The presentation looks best when you organize the ingredients in sections. Turn heat to medium and cook for 5-10 minutes until boiling.
  • When the broth is boiling, add instant ramen on top of all the ingredients. Turn heat to medium and cook for 3-5 minutes until instant ramen has cooked to your desired texture.
  • Lastly, add cheese and green onions for garnish. When the cheese has melted, the stew is ready to eat! If broth is too thick add half cup of hot water at the end and mix.

Notes

Expert Tips
  • If your soup is too thick to your liking, you can add half cup to 1 cup of hot water in the army stew (especially if you like more soup). Stir together and it will be less thick. 
    Eat the noodles first because the longer it sits in the broth, the more soggy it is (unless you like those type of noodles 😅
  • Put pot on a portable stove so your stew can stay warm at all times when you're eating. This dish is meant to be eaten really hot.
