One Pot – Chinese Chicken Rice

On days that I feel lazy and want to cook something delicious, I always try to make a dish out of my rice cooker. The rice cooker helps make the rice (carb) and can steam (high moisture) meat! To make this one pot – Chinese chicken rice, all you gotta do is put all the ingredients and wait for the magic to happen! I also recommending adding Chinese sausage to this dish to bring out some sweetness and oil for the rice!

If you want, you can also add shiitake mushrooms to the rice cooker. I didn’t add this because it takes too long to soak it and prepare for this quick and easy recipe. If you have more time or have fresh shiitake mushrooms, I highly recommend adding.

Spicy Bake Mix

I personally love using spicy bake mix for an authentic Chinese flavor! The spicy bake mix consists of ginger, onion, salt, and MSG powder. I usually buy this at my local asian grocery store. Sometimes I haven’t been able to buy this at 99 ranch or big retail asian stores. If you cannot find this in your local asian store, you can buy it here on Amazon.

If you don’t have a rice cooker, here are alternative cooking instructions:

I understand that not everyone has a rice cooker, so some of us might use pots to cook the rice and chicken. If that is you, get your medium sized pot ready. Add the rice and chicken according to the recipe directions. Once your pot is filled with rice, water and chicken…follow the instructions below and you can make your chicken rice!

  1. Heat pot to medium high and cook for 7-9 minutes covered. You will need to watch over the fire because the water might boil over ◡̈
  2. Turn heat to low and cook for 10 more minutes.
  3. Then turn off the heat and do not open the covered pot. Leave for 25-30 minutes covered. After the 30 minutes is up, cut your chinese sausage and garnish with green onions and enjoy!

INGREDIENTS YOU NEED FOR YOUR CHINESE CHICKEN RICE:

Chicken marinade:

  • 1 lb chicken thigh, cut in 1 inch pieces
  • 2 garlic, sliced
  • 1 tablespoon ginger, sliced
  • 1.5 tablespoon of neutral oil (light olive oil or vegetable oil)
  • 1.5 tablespoon water
  • 1 tablespoon corn starch
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 tbs 4 seasons spicy bake mix (mix of ginger, onion, salt, and MSG powder) – easy and delicious! – if you don’t have, add 1/2 tbs chicken bouillon
  • 1 tbs soy sauce
  • 1/2 tablespoon shaoxing cooking wine (you can use dry sherry as an alternative or omit this ingredient)

Rice cooker:

  • 1.5 cups jasmine rice
  • 1 1/4 cup water
  • marinated chicken
  • 1 green onion (for garnish at end)
  • optional: 2 chinese sausage
  • sweet soy sauce (for garnish, optional)

STEPS TO MAKE THE CHINESE CHICKEN RICE:

  1. Cut the chicken thigh in one inch pieces. Sliced 2 garlic cloves and 1 tablespoon ginger.
  2. To marinate, add garlic, ginger, 1.5 tablespoon of light olive oil, 1.5 tablespoon water, 1 tablespoon corn starch, 1 teaspoon salt, 1 teaspoon sugar, 1/2 tablespoon 4 seasons spicy bake mix, 1 tablespoon soy sauce, 1/2 tablespoon shaoxing cooking wine to the chicken. Mix together and set aside.
  3. Wash 1.5 cups jasmine rice 3-4 times. Next, add 1 1/4 cup water to the rice. The water should barely cover the surface of the rice. We don’t need to add too much water because the chicken will provide some moisture to the rice and we don’t want soggy rice 😉
  4. (optional) Add 2 chinese sausages to the rice.
  5. Add the marinated chicken on top of the rice and place the rice in the rice cooker! See instructions above for how to make this in the pot if you don’t have a rice cooker.
  6. Once your rice is ready and you hear the magical sound. Let it rest in the rice cooker for 15 minutes! I know this is hard but this helps make your rice nice and fluffy!
  7. To serve, take out the Chinese sausage and cut in slices. Garnish the rice with green onions and sweet soy sauce (optional). Hope you enjoy!

Ingredients

chicken marinade

  • 1 pound chicken thigh cut in 1 inch pieces
  • 2 garlic sliced
  • 1 tablespoon ginger sliced
  • 1½ tablespoon neutral oil light olive oil or avocado oil
  • 1½ tablespoon water
  • 1 tablespoon corn starch
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • ½ tablespoon 4 season spicy bake mix if you don't have, sub with 1/2 tbs chicken bouillon
  • 1 tablespoon soy sauce
  • ½ tablespoon shaoxing cooking wine you can use dry sherry as an alternative or omit this ingredient

rice cooker

  • 1½ cups jasmine rice
  • 1¼ cup water
  • marinated chicken
  • 1 green onion for garnish at end
  • 2 chinese sausage optional but highly recommended!
  • sweet soy sauce for garnish, optional

  • To marinate, add garlic, ginger, 1.5 tablespoon of light olive oil, 1.5 tablespoon water, 1 tablespoon corn starch, 1 teaspoon salt, 1 teaspoon sugar, 1/2 tbs 4 seasons spicy bake mix, 1 tbs soy sauce, 1/2 tablespoon shaoxing cooking wine to the chicken. Mix together and set aside.
    1 pound chicken thigh, 2 garlic, 1 tablespoon ginger, 1½ tablespoon neutral oil, 1½ tablespoon water, 1 tablespoon corn starch, 1 teaspoon salt, 1 teaspoon sugar, ½ tablespoon 4 season spicy bake mix, 1 tablespoon soy sauce
  • Wash 1.5 cups jasmine rice 3-4 times. Next, add 1 1/4 cup water to the rice. The water should barely cover the surface of the rice. We don’t need to add too much water because the chicken will provide some moisture to the rice and we don’t want soggy rice 😉

    Really want to try this recipe. You listed out tablespoon and teaspoon in ingredients. However some are listed as tbs..Not sure if that stands for tablespoon or teaspoon?

    Hi Dana. I followed the recipe exactly and my rice is not fully cooked. Don’t kenos why? I used measuring cup for the rice and water quantity vs the cup that came with the rice cooker. What did I do wrong?

      Hi ◡̈ So sorry to hear about that. It might not be your fault at all. I think some rice cookers don’t work for this recipe, unfortunately. I recommend to make this in a clay pot or regular pot. Or you can cook the rice regularly and steam the chicken separately. When the rice is done, add the steamed chicken on top.

My new favorite soup right now 😍Here’s a supe My new favorite soup right now 😍Here’s a super easy and not traditional Korean ox bone soup aka Seolleongtang 설렁탕 🥰 Super hot bone broth is topped with beautifully marbled beef, Chinese chives, green onions, and some salt and pepper to taste. Add some Korean kimchi radish and it’s chef’s kiss!

I finally finished testing out this recipe (it’s beeen a few months haha)! I was struggling with the texture for a little while. Now, the recipe is good to go ◡̈  The flavor is very savory from the chinese sausage and cured pork belly (made from my dad!) and also sweet from the radish. The texture is firm but not too doughy because I loaded this up with lots and lots of radish. You will never find a restaurant that has as much radish as this homemade recipe. Lastly, I pan fried the turnip cake to give it a nice crisp at the end. 

Don’t forget Chinese New Year is celebrated on the eve (21st of January!) so have a nice dinner with your family on Saturday. Then my mom told me to not clean or do any labor on actual Chinese New Years Day (22nd of January). Wishing all you dumplings good health and wealth in the upcoming year.

This egg drop soup is inspired by my parent’s Ch This egg drop soup is inspired by my parent’s Chinese restaurant 😋Silken tofu is cooked in a sweet chicken broth and cornstarch slurry is added to thicken the soup as well as make the smooth & thick texture. 

Some Cantonese restaurants serve this with real crab meat (highly recommend if you have this!) and the color is on the whiter end (hence why we’re using egg whites!). However, if you want to use the whole egg, feel free to use it! The egg yolk makes the soup more yellow and creamy.

Fridge clean out time! 🙃 Crab jeon (omelette) o Fridge clean out time! 🙃 Crab jeon (omelette) or korean seafood pancake is a great recipe to use all your leftover ingredients in the fridge. For groceries, I always use the ‘first in, first out’ method meaning the older groceries need to be used before eating the new stuff. I’m chopping up leftover vegetables and onions in small pieces and mixing them together with imitation crab. The pancake may taste different depending on what ingredients you have but once you mix it with eggs and some flour (especially korean pancake mix!), it will taste scrumptious in it’s own unique way. 

The next time you stock up, make sure to keep some type of seafood in the freezer at all times. For me, I tend to buy extra imitation crab and shrimp. Then you will always have good staples to make with your leftover ingredients.
