Spicy Walnut Garlic Noodles

These spicy walnut garlic noodles are crunchy, spicy, savory and chewy! My spicy walnut garlic noodle recipe was inspired by spicy szechuan noodles. However, I wanted to add a nice crunch from the toasted walnuts and freshness from the basil and green onions. The noodles (sliced noodles) used for this recipe are thicker noodles and stick to the sauce so well!

I was inspired to make this dish after trying the Korean fusion restaurant called Mokyo in New York City. Mokyo served these mala garlic oil noodles with basil and brazil nuts. The dish I tried was definitely one of my favorite asian noodles dishes and I knew I had to re-create it at home! The taste of the spicy walnut garlic noodles taste very similar to other asian garlic noodles you had in the past. 

Walnut Sauce

The walnuts are toasted in the olive oil for 5 or so minutes to achieve a crunchy and airy texture. After the walnuts are toasted, the walnuts and oil are combined with thai chili flakes and garlic. 

The walnut sauce is spicy and garlicky, that would go well with any type of carb (rice, pasta, noodles, and bread).

Noodles

These spicy walnut garlic noodles are different from Chinese spicy noodles recipe and hot and spicy noodles recipe because its not traditional in asian cuisine to fry nuts in oil before serving with these wheat noodles. 

In addition these wheat noodles are commonly used for You Po Mian (油泼面), which is when hot oil is poured over garlic, chilis and meat. However, I love using these wheat noodles because it holds the sauce so well! If it is hard to find the wheat noodles in your local Asian grocery store, you can also purchase mafadine pasta instead. Using the mafadine pasta, the dish will be similar to chili oil pasta, which is also very delicious.

Ingredients you need for your spicy walnut garlic noodles:

  • wheat noodles (slice cut noodles)
  • soy sauce
  • fish sauce
  • rice vinegar
  • sesame oil
  • sesame seeds
  • green onions 
  • basil 
  • walnuts
  • olive oil
  • thai red chili flakes
  • sugar
  • salt
  • garlic cloves

Steps to make spicy walnut garlic noodles:

  • Step 1. Boil noodles according to package directions and strain noodles.
  • Step 2. Roughly chop walnuts. In a pot, add oil and walnuts. Then turn heat to low medium and fry until golden. Continue to stir the walnuts around to prevent them from burning. (should take 5-7 minutes)
  • Step 3. Once walnuts are golden, turn off the heat. Add grated garlic, red chili flakes, sugar and salt. Mix together.
  • Step 4. To assemble, add noodles to a bowl. Add soy sauce, fish sauce, and rice vinegar. Add walnut sauce and mix noodles with all the sauces together.
  • Step 5. Garnish with basil and green onions. Top with sesame oil and sesame seeds. Hope you enjoy!

These spicy walnut garlic noodles are so quick and easy that you will be repeating this recipe every week! Or you will find that you want to put that delicious walnut sauce on all your noodle dishes. It even works well with fried eggs!

Ingredients

Walnut Sauce

  • ½ cup walnuts chopped
  • 4 tablespoon olive oil
  • 1 teaspoon thai red chili flakes
  • ½ teaspoon sugar
  • ¼ teaspoon salt
  • 2 garlic cloves grated

Noodles

  • 2 servings thick noodles (sliced noodles)
  • 1 ½ tablespoon soy sauce
  • 1 ½ tablespoon fish sauce
  • ½ tablespoon rice vinegar
  • ¼ teaspoon sesame oil
  • walnut sauce
  • sesame seeds for garnish
  • green onions for garnish

If you’re vegan or vegetarian, you can omit the fish sauce and add another 1 tbs soy sauce.

I finally finished testing out this recipe (it’s beeen a few months haha)! I was struggling with the texture for a little while. Now, the recipe is good to go ◡̈  The flavor is very savory from the chinese sausage and cured pork belly (made from my dad!) and also sweet from the radish. The texture is firm but not too doughy because I loaded this up with lots and lots of radish. You will never find a restaurant that has as much radish as this homemade recipe. Lastly, I pan fried the turnip cake to give it a nice crisp at the end. 

Don’t forget Chinese New Year is celebrated on the eve (21st of January!) so have a nice dinner with your family on Saturday. Then my mom told me to not clean or do any labor on actual Chinese New Years Day (22nd of January). Wishing all you dumplings good health and wealth in the upcoming year.

This egg drop soup is inspired by my parent’s Ch This egg drop soup is inspired by my parent’s Chinese restaurant 😋Silken tofu is cooked in a sweet chicken broth and cornstarch slurry is added to thicken the soup as well as make the smooth & thick texture. 

Some Cantonese restaurants serve this with real crab meat (highly recommend if you have this!) and the color is on the whiter end (hence why we’re using egg whites!). However, if you want to use the whole egg, feel free to use it! The egg yolk makes the soup more yellow and creamy.

Fridge clean out time! 🙃 Crab jeon (omelette) o Fridge clean out time! 🙃 Crab jeon (omelette) or korean seafood pancake is a great recipe to use all your leftover ingredients in the fridge. For groceries, I always use the ‘first in, first out’ method meaning the older groceries need to be used before eating the new stuff. I’m chopping up leftover vegetables and onions in small pieces and mixing them together with imitation crab. The pancake may taste different depending on what ingredients you have but once you mix it with eggs and some flour (especially korean pancake mix!), it will taste scrumptious in it’s own unique way. 

The next time you stock up, make sure to keep some type of seafood in the freezer at all times. For me, I tend to buy extra imitation crab and shrimp. Then you will always have good staples to make with your leftover ingredients.

My uncle taught me how to make braised pork over r My uncle taught me how to make braised pork over rice! This dish tastes sweet and savory (similar to teriyaki) which goes so well with rice. The recipe is inspired by Japanese soboro don which is served with scrambled egg, but I think it also reminds me of the Taiwanese dish, Lu rou fan. We cook the ground pork down in some beer to make the meat taste sweeter as well as cut down on the gaminess.

You’re about to eat 2 bowls of rice with this ea You’re about to eat 2 bowls of rice with this easy and delicious mapo tofu! This is spicy, flavorful and a little tingly from the peppercorn oil. This is not an authentic replica of the sichuan mapo tofu but it’s very close. I would say the dish is a combo of sichuan and cantonese flavors 😍
My uncle taught me how to make this and it’s one of my favorite recipes to cook when I don’t have a lot of ingredients in the fridge. Also eating spicy and hot foods when it’s cold outside always makes me happy for some reason. Check full recipe in the blog or link in bio 🥵❤️‍🔥🌶
