    Galbi Fried Rice with Gochujang Sauce

    Galbi (beef short rib) fried rice is a quick and easy meal you can make for your family. You can also make this big batch of rice for meal prep! First, you can start marinating your galbi with a sweet tenderizing sauce. While the meat is marinating, chop up the carrots and onions.

    The gochujang (red fermented bean paste) sauce added at the end is optional but it gives the rice a nice spicy kick. Wrap the rice in some crispy seaweed for an out of this world bite!

    INGREDIENTS YOU NEED FOR YOUR GALBI FRIED RICE:

    fried rice:

    • 1.5 pound short rib, cut in ½ inches cubes
    • 2 tbs neutral oil
    • 4 cups cooked rice (leftover is best)
    • 2-3 carrot, peeled chopped in small pieces
    • ½ onion, chopped in small pieces
    • 3 garlic cloves
    • 2 tbs soy sauce
    • 2 tbs marinade
    • 1 teaspoon oyster sauce
    • green onions, for garnish
    • 2 fried eggs on top
    • sesame seeds, for garnish

    galbi sauce:

    • ¼ white onion
    • 4 garlic cloves
    • 1 kiwi (I used golden for extra sweetness), sub with ½ korean pear
    • ¼ cup soy sauce
    • ½ tbs ginger
    • 1 tbs sugar
    • ½ tbs oyster sauce
    • ¼ cup water
    • 1 tbs honey, optional

    gochujang sauce (optional):

    • ½ tbs gochujang
    • 1 tbs water
    • 1 teaspoon sugar
    • 1 teaspoon soy sauce

    STEPS TO MAKE THE GALBI FRIED RICE:

    1. Slice the meat off the short rib bones in 1 inch pieces. You can sear the bones later if you like to eat them.
    2. Add ¼ white onion, 2 garlic cloves, 1 kiwi (I used golden for extra sweetness), ¼ cup soy sauce, ½ tbs ginger, ½ tbs sugar, ½ tbs oyster sauce, and ¼ cup water. Optional – I like to add 1 tbs honey to the marinade as well! Blend sauce until its smooth. Then add marinade to the cut short rib.
    3. Marinate galbi for 15-30 minutes. Don’t marinate for longer than 1 hour because the meat will be too tenderized from the kiwi.
    4. While the meat is marinating, chop onions, carrot, and garlic. Slice green onions and set aside.
    5. On medium high heat, add 1 tbs oil & saute galbi for 2 minutes until golden brown and set aside.
    6. On medium high heat, add 1 tbs oil & add carrots. Saute for 1-2 minutes and then add onions, garlic for a minute. Add your 4 cups rice and stir until its soft. Then, add 2 tbs galbi sauce, 2 tbs soy sauce, 1 teaspoon oyster sauce, and mix together. Lastly, add your cooked galbi and mix together. Finish with freshly grounded pepper and sesame oil.
    7. Garnish with gochujang sauce (optional) and 2 fried eggs, sliced green onions and sesame seeds. Hope you enjoy!

    Ingredients
