Golden egg fried rice is the best fried rice hack because it makes delicious rice using the yolks. The yolks make this rice more rich and fragrant. I love using the classic Chinese sausage for this recipe as well.
My parents would make this type of rice for me as a kid and I loved the sweetness of the Chinese sausage and the crispy of the chinese broccoli. If you haven’t made fried rice using this technique, I highly recommend it!
INGREDIENTS YOU NEED FOR YOUR GOLDEN FRIED RICE:
- cooked white rice (day old rice works best)
- egg yolk
- egg whites
- chinese broccoli stems only
- corn oil or vegetable oil
- soy sauce
- sugar
- chicken bouillon
- chinese sausage
- green onion
STEPS TO MAKE THE GOLDEN FRIED RICE:
- Separate egg yolks and egg whites. Add egg yolks to rice and mix well until all the rice is coated in the yolk (all yellow rice).
- Prep the chinese sausage by giving it a quick rinse and drying with a paper towel. Slice the chinese sausage. Wash the chinese broccoli stems and slice the stems only. You can boil the leaves or saute it for a later meal 😉
- Heat wok or pan on medium high heat. Once its hot, add 1.5 tablespoon corn oil to a wok or pan. Add the sliced chinese sausage in the pan and saute for 1-2 minutes. Take the sausage out and set aside.
- Next, scramble the egg whites for 30 seconds max and take it out and set aside.
- Then, add the white rice that was mixed with the egg yolks and fry until there are no clumps (2-3 minutes). Keep mixing to ensure the rice doesn’t stick to the pan.
- Add the chinese broccoli stems and cooked chinese sausage. Mix together for 1 minute. Add 2 tablespoons soy sauce, 1 teaspoon sugar, ½ teaspoon chicken bouillon and mix well.
- Next, add the scrambled egg whites and 30 seconds and you’re done! The rice should take no longer than 8 minutes. Garnish with sliced green onions. Hope you enjoy!
