
Salted Egg Fried Chicken Wings
The salted egg fried chicken recipe is adapted from Malaysian and Singaporean cuisine. The sauce is made from salted duck egg yolks. Coating the fried chicken in a buttery and salted egg sauce creates an umami and savory wing!
Salted egg is usually eaten with white rice due to its salty and savory flavor. So make sure you can eat this dish with some white rice. Try this salted egg fried chicken wing recipe for amazing flavor and a super delicious crunch (from double-frying the wings)!

Ingredients you need for your salted egg fried chicken wings:
- Chicken wings
- cooking wine
- soy sauce
- salt
- black pepper
- chinese 5 spice
- ginger
- oil
- eggs
- corn starch
- salted duck egg yolk (yolk only, no egg white)
- oyster sauce
- garlic
- Sugar
- shallot
- butter
Steps to make the salted egg fried chicken wings:
- Step 1. Marinade chicken wings in 1.5 tablespoons cooking wine, 1 tablespoon soy sauce, 1 teaspoon salt, ¼ pepper, ½ teaspoon Chinese 5 spice, and ½ tbs ginger for 30 minutes.
- Step 2. Beat 2 eggs and add a pinch of salt in a bowl. Place 1 cup cornstarch on a plate. Dip wings in cornstarch, then egg, then in cornstarch again. Leave wings on the plate for 15 minutes before frying to ensure batter will stick on the wings when frying.
- Step 3. Heat 3 cups of oil to 350F in a pot (medium heat). To check if the oil is hot enough, add a little cornstarch and see if the cornstarch starts to bubble. If yes, then fry wings for roughly 7 minutes (they will be a light blonde color). Cooking Tip: Make sure that you don’t overcrowd the wings. This will result in a soggy and oily wing. After frying, place on a wire rack or on top of paper towels.
- Step 4. Heat oil to 400F (medium-high heat). Fry the wings again until they turn golden brown for 2-3 minutes. Place on a wire rack or on top of paper towels.
- Step 5. To make the sauce, start by cutting the salted duck eggs in half and scoop out the egg yolks. Then mix the egg yolks with 2 cloves of minced garlic, ½ teaspoon sugar, and 1 teaspoon oyster sauce.
- Step 6. In a pan, heat up 1 tablespoon of butter and saute minced shallots for 1-2 minutes. Then add the egg yolk mixture and fry for 2 minutes. Add wings in the pan and coat the wings with egg yolk sauce.

- 3 cups canola oil
- 2 eggs
- 1 cup cornstarch
Salted Egg Sauce
- 3 salted egg yolk yolk only, no egg white
- 1 teaspoon oyster sauce
- 2 cloves garlic minced
- ½ teaspoon sugar
- ¼ teaspoon pepper
- 1 shallot finely minced
- 1 tablespoon butter
