Make Strawberries & Cream Mochi with 2 ingredients – melona ice cream and mochiko flour! It’s easy, delicious and soft!
Ingredients you need for your strawberries & cream mochi:
- strawberry melona popsicles
- glutinous rice flour (also known as mochiko flour)
- potato starch
Strawberries and cream filling:
- heavy whipping cream
- sugar
- strawberries
Steps to make strawberries & cream mochi:
- Step 1. Melt two melona popsicles. Mix with the glutinous rice flour until the texture is smooth for the mochi mixture.
- Step 2. Cover the mochi mixture with a lid and microwave for 1 minute. Stir the mixture and put it back in the microwave for one more minute. Stir again and form mochi in a ball.
- Step 3. On a flat surface, sprinkle some potato starch and add the mochi on top of the starch. Sprinkle with a little more potato starch to prevent the mochi from sticking.
- Step 4. Flatten the mochi and cut into squares.
- Step 5. To make the strawberries and creme filling, whip heavy whipping cream and add sugar gradually until stiff peaks form. Cut strawberries in small pieces and mix with the whipped cream.
- Step 6. Scoop the cream in bite sized pieces on the plate. Then freeze for minimum of 15 minutes.
- Step 7. Add the cream in the mochi and fold the sides and pinch the mochi shut.

Notes
You can melt the melona ice cream in the microwave to speed things up. I recommend to put in microwave every 10 seconds and stirring until melted.
