This viral Inkiyago sandwich is also known as the confession sandwich among kpop idols. Rumors say the idols would pass this sandwich to their idol crush along with a love note wedged between the saran wrap backstage during the music show (the name of the sandwich comes from the music program, Inkigayo).
The sandwich has 3 layers. The first layer is a creamy potato and egg salad. The middle layer is strawberry jam. The jam provides a sweetness that compliments the savory of the potato and egg salad as well as compliments the bitter flavor of the cabbage slaw. The third layer is a cabbage slaw that consists of thinly sliced cabbage, imitation crab, and mayo. White bread (I like to use Japanese Shokupan!) is perfect for this sandwich because its soft, sweet and mild in flavor.
Not only is the story behind this sandwich so cute, idols also raved how delicious this was! The combo may be strange at first but after trying, I thought it tasted pretty delicious!
INGREDIENTS YOU NEED FOR YOUR INKIGAYO SANDWICH:
Sandwich
- 1.5 tablespoon strawberry jam
- 4 slices white bread
Egg & Potato Salad
- 2 hardboiled eggs, peeled
- 1 gold potato, peeled
- 3 tbs kewpie mayo
- ½ teaspoon salt
- ¼ teaspoon pepper
- pinch of sugar
- ¼ teaspoon garlic powder (optional)
Cabbage Slaw
- 1 cup thinly sliced cabbage
- 2 sticks imitation crab
- 3 tablespoons kewpie mayo
- ¼ teaspoon salt
- ¼ teaspoon pepper
- pinch of sugar
STEPS TO MAKE THE INKIGAYO SANDWICH:
Egg and potato salad –
- Boil eggs and potatoes. Take out eggs after boiling for 10 minutes. Leave potatoes in the water and boil for 10 more minutes until fork tender. Fork tender is when you can pierce the fork through the middle of the potato.
- Peel the shells of the eggs and take off the skin of the potato. Chop the potatoes into small cubes. In a bowl, take out the egg yolk and place them in a bowl. Chop the egg whites into small cubes.
- In the bowl with egg yolks, mix 3 tablespoons of kewpie mayo with egg yolks. Add salt, pepper, garlic powder, and sugar. When the mixture is smooth, add egg whites and potatoes. Mix everything together and set aside.
Cabbage Slaw –
- Slice cabbage thinly.
- Mix cabbage with 3 tablespoons of kewpie mayo, imitation crab, salt, pepper and a pinch of sugar. Mix until everything is well incorporated and set aside.
Assemble Sandwich –
- Add one piece of white bread. Then, spread a layer of egg and potato salad.
- Add one piece of white bread on top. Spread a thin layer of strawberry jam.
- Add one piece of white bread on top of jam (optional – if you don’t like too much bread like me!).
- Add cabbage slaw and spread evenly. Add one piece of white bread on top and push gently to keep the layers together.
- Cut off the crusts and use them as croutons later (tip: air fry crusts for 5-7 minutes on 325F with salt, pepper and oil!). Wrap in saran wrap and cut in half. Hope you enjoy!
