    Hong Kong Macaroni Soup

    Hong Kong Macaroni Soup is a popular soup that is served in many HK cafes. The chicken soup with macaroni and ham makes this dish so comforting, it is perfect on a cold day!

    This is one of the most famous comfort foods for Cantonese families. My family made this for me as a kid more often than as an adult because it is so easy and the flavors are simple, yet delicious. The noodles are soft and soaks up the chicken broth. I like to add some ham and a fried egg for more protein. Not only is this a good dish for kids, it is loved among adults!

    Ingredients

    Hong Kong macaroni soup relies on a handful of Chinese pantry staples to prepare! Here’s a look at the main ingredients:

    Chicken broth, water, oyster sauce, soy sauce, macaroni, ham and sesame laid out on table.
    • Macaroni Pasta – this type of noodle is traditionally used. If you want to use other egg noodles, that works too!
    • Chicken broth – get unsalted chicken broth so you can adjust the amount of salt in your soup.
    • Seasoning – I use soy sauce and oyster sauce to give the chicken broth some saltiness, sweetness, and umami. You can add salt if you wish (may taste more bland). Add the smallest drop of sesame oil for fragrance!
    • Ham – I used deli sliced ham as this is what traditional cha chaan tang (Hong Kong diners) use. You can also fry some spam instead!

    More topping ideas:

    • Fried spam and fried egg
    • Add more vegetables – you can add frozen (or fresh!) carrots, peas, and corn.

    How to make HK Noodle Soup

    Step 1: Cut ham in slices. You can use scissors to make it quick.

    Step 2: Boil chicken broth in a pot on medium heat. Then, add macaroni noodles when the broth is boiling.

    Step 3: Next, add soy sauce and oyster sauce to the broth and cook until the noodles are soft (or to your desired texture). Adjust according to your taste (considering that your chicken broth may be saltier or less salty than mine).

    Step 4: To make the most perfect sunny side egg, heat pan on medium heat. When the pan is hot, add some oil and crack your egg. Then, add 1 teaspoon of water and cover for 1 minute until the egg white is cooked.

    Step 5: When the noodles are cooked, add your sliced ham and sesame oil. Mix together so the noodles are not stuck together.

    Traditionally this soup is served with milk tea and other Hong Kong classics such as Hong Kong French Toast, Cheung Fun (Rice Noodles), and Hong Kong Style Pork Chop.     How can I store and reheat leftovers?

    The noodles will absorb most of the soup. If you can’t finish the soup in one go, I recommend to put it in an airtight container. Place in fridge for up to 3 days. To reheat, add some more chicken broth and heat in a pot until boiling.
