Easy Ox Bone Soup (Seolleongtang)

January 26, 2023

Jump to Recipe Print Recipe

Easy ox bone soup (called Seolleongtang 설렁탕 in Korean), is a hot Korean soup made with beef bone broth, beef slices, green onions and thin noodles. To make an easier and quicker version of ox bone soup, you can use store-brought beef broth (Korean beef broth is the best to use for this). This dish is perfect in the winter time when you want to make something under 20 minutes. The bone broth is also packed with lots of collagen, protein and nutrients. Keep in mind this is a quick version of Seolleongtang and may taste different than the traditional Seolleongtang that has been boiling for 3 or more hours. Nonetheless, the recipe is absolutely delicious and is perfect for those busy days!

Which Beef Broth Should I Buy?

JINGA BEEF BONE BROTH – taste so good!

Buying the right beef broth will greatly impact the taste of your soup. I recommend going to a Korean grocery store like H-Mart and pick out a Seolleongtang (ox bone broth) pictured above. The brand I like is JINGA. The one I picked out did not include beef. There are some versions that already have beef inside but I think the beef is chewy and tastes overcooked in my opinion. That is why I like to add in my own sliced beef.

To heat the bone broth, I use this Korean stone bowl that I got at h-mart (also available on Amazon). It keeps the soup warmer for a longer time period.

INGREDIENTS YOU NEED FOR YOUR OX BONE SOUP:

  • 1 packet korean ox bone soup (beef broth)
  • 1-2 chinese chives
  • 1 green onion
  • salt and pepper, to taste – I add 1/2 teaspoon of salt and I think it is perfect!
  • thin slices beef (4-6 slices) – I used sliced beef flank steak with lots of marbling (because I like fatty cuts of beef!). You can get pre-sliced beef at asian grocery stores.
  • small bundle Korean somyeon noodles
korean somyeon thin noodles

side dishes:

  • kimchi radish
  • kimchi

STEPS TO MAKE THE OX BONE SOUP:

  • Step 1. Open package of ox bone broth. Pour broth in pot and turn on medium high. (optional step – boil somen noodles for 2 minutes and strain. Then, rinse with cold water to wash off the excess starch and strain again.)
pour bone broth in pot
  • Step 2. Slice green onions and chinese chives. Slice beef in 3 inch slices.
  • Step 3. Once the ox bone broth starts boiling, add sliced beef and cook to your desired wellness. Take the beef out and set aside.
add sliced beef in broth and take out when it’s done to avoid overcooking.
  • Step 4. Turn off the heat and add your green onions, chinese chives, and noodles. To season, start with 1/4 teaspoon of salt, then add 1/4 teaspoon more if you need it! Personally 1/2 teaspoon is perfect for me. I would not recommend going over 1 teaspoon! Depending on which bone broth you bought, the soup may become too salty if it’s over 1 teaspoon and there’s a high chance you won’t be able to fix it.
  • Step 5. Serve this easy ox bone soup with korean kimchi radish and kimchi. The soup is also very delicious with a hot bowl of rice. Enjoy while warm!

Must try Korean delicious soups:

  • Soondubu – Korean soft tofu soup – classic spicy tofu soup with meat and extra soft tofu
  • doenjang – soybean paste stew – umami, savory and delicious soup filled with soybean paste and tofu
  • Tuna Kimchi Jjigae – fermented kimchi cooked in a seafood broth with soft tofu and tuna for a delicious funk!

I know I’m not the best wrapper lol don’t make fun of me pls. 🤓

Cooking Tip: If you make some modifications to the filling, you can make wontons and potstickers all at once. Although, you will need different types of wrappers: thin egg wrappers for wontons and thick ones for potstickers. There is also a difference in cooking methods as wontons are usually boiled while potstickers are pan-fried for a crispy exterior.

The easiest way to achieve flavor town is to add a The easiest way to achieve flavor town is to add a soy cured egg to your rice, noodles or any carb you wish (porridge and toast too!). The raw egg yolks are marinated in soy sauce, mirin & other goodies (bonito, kombu, garlic and onions) for a few hours or overnight. The textures and flavors vary depending on how long you marinate them for. I preferred marinating the eggs overnight (24 hours) to achieve a jammy and umami flavored egg yolk!

See my blog post (link in bio) to see detailed instructions and tips to make the perfect soy cured egg or google ‘soy eggs dana’ for the recipe!

I love adding this teriyaki glaze on everything! E I love adding this teriyaki glaze on everything! Especially on my katsu and donburi (rice) bowls . The teriyaki tastes slightly sweet, savory, and reminds me of donburi bowls in Japan! To get this authentic taste, I cook @mizkanflavors Mirin Sweet Cooking Seasoning, soy sauce, sugar and sake together. Adding extra slices of ginger helps with the gaminess of pork and balances the sweetness of the teriyaki glaze. The sauce is very versatile and can be used on many Japanese traditional dishes such as pork katsu, fish, chicken or steamed vegetables.

One of my favorite donburi is pork katsu! So, I created a tasty recipe that did not require oil frying. This air-fryer recipe comes very close to the fried version and tastes not as heavy. The exterior is crispy and fragrant! The best part is that I eat it with scrambled eggs, fresh rice and teriyaki. Hope you get to try out this delicious recipe!

Servings:  2 people
Ingredients-

Air-Fryer Pork Katsu:
- 2 pork cutlets (boneless, ½-pound each)
- 1 tablespoon all-purpose flour
- 1 egg, beaten
- ¼ cup panko bread crumbs
- ¼ teaspoon salt and pepper
- 1 tablespoon neutral oil (vegetable or canola)

Teriyaki Glaze:
- ¼ cup soy sauce
- ¼ cup Mizkan® Mirin Sweet Cooking Seasoning
- 1 tablespoon sugar
- 4 slices ginger, ¼ inch thick each approximately x-inch thick
- 1 tablespoon sake
