I love eating the kimchi fried rice with cheese after korean bbq because the rice gets cooked in the leftover oil from my pork belly and brisket! I wanted to create a similar version at home with egg surrounding the kimchi fried rice! Its so delicious and fun to look at with the volcano shape.
Don’t forget the mozzarella for that immaculate cheese pull!
Ingredients you need for your kimchi fried rice with cheese:
- pork belly or brisket (any leftover protein works)
- cooked white rice (leftover works best)
- kimchi
- white onion
- green onions
- spam
- roasted seaweed
- sesame seeds
egg mixture:
- eggs
- salt and pepper
- shredded mozzarella cheese
spicy sauce:
- garlic
- soy sauce
- gochujang (red pepper paste)
- sugar
- mirin
- sesame oil
- fish sauce
Steps to make the kimchi fried rice with cheese:
- Make spicy sauce by mixing 3 cloves of minced garlic with 1 tablespoon soy sauce, 2 tablespoons gochujang, 1 tablespoons sugar, ½ tablespoons mirin, 1 teaspoon sesame oil, and 1 tablespoon fish sauce.
- Heat pan to medium heat and cook pork belly (or protein of choice). Next, add ½ cup kimchi, sliced onion, sliced green onion, and spam (cut in small pieces). Fry for 1-2 minutes until golden.
- Next, add 3 cups of white rice and spicy sauce (from step 1). Mix together until all the rice is mixed with the sauce. If you like crispy rice, you can press the rice down on the pan and cook for 1-2 minutes.
- Crush roasted seaweed in small pieces and sprinkle on the fried rice. Add sesame seeds.
- Add fried rice in a bowl and press down to make the round ‘volcano’ shape.
- Add 3 eggs in a bowl and a pinch of salt and pepper. Whisk until smooth. Next, mix in ½ cup Mozzarella cheese.
- Heat pan to medium heat. Gently add the bowl of rice on the pan while maintaining the ‘volcano’ shape. Be careful the bowl is hot! Dig a small hole at the top of the rice.
- Add egg mixture around the rice and a little bit in the center.
- Cook egg for 2-3 minutes until fluffy and cheese has melted. Top with some more seaweed! Hope you enjoy!
