I love eating the kimchi fried rice with cheese after korean bbq because the rice gets cooked in the leftover oil from my pork belly and brisket! I wanted to create a similar version at home with egg surrounding the kimchi fried rice! Its so delicious and fun to look at with the volcano shape.

Don’t forget the mozzarella for that immaculate cheese pull!

Ingredients you need for your kimchi fried rice with cheese:

  • pork belly or brisket (any leftover protein works)
  • cooked white rice (leftover works best)
  • kimchi
  • white onion
  • green onions
  • spam
  • roasted seaweed
  • sesame seeds

egg mixture:

  • eggs
  • salt and pepper
  • shredded mozzarella cheese

spicy sauce:

  • garlic
  • soy sauce
  • gochujang (red pepper paste)
  • sugar
  • mirin
  • sesame oil
  • fish sauce

Steps to make the kimchi fried rice with cheese:

  1. Make spicy sauce by mixing 3 cloves of minced garlic with 1 tablespoon soy sauce, 2 tablespoons gochujang, 1 tablespoons sugar, 1/2 tablespoons mirin, 1 teaspoon sesame oil, and 1 tablespoon fish sauce.
  2. Heat pan to medium heat and cook pork belly (or protein of choice). Next, add 1/2 cup kimchi, sliced onion, sliced green onion, and spam (cut in small pieces). Fry for 1-2 minutes until golden.
  3. Next, add 3 cups of white rice and spicy sauce (from step 1). Mix together until all the rice is mixed with the sauce. If you like crispy rice, you can press the rice down on the pan and cook for 1-2 minutes.
  4. Crush roasted seaweed in small pieces and sprinkle on the fried rice. Add sesame seeds.
  5. Add fried rice in a bowl and press down to make the round ‘volcano’ shape.
  6. Add 3 eggs in a bowl and a pinch of salt and pepper. Whisk until smooth. Next, mix in 1/2 cup Mozzarella cheese.
  7. Heat pan to medium heat. Gently add the bowl of rice on the pan while maintaining the ‘volcano’ shape. Be careful the bowl is hot! Dig a small hole at the top of the rice.
  8. Add egg mixture around the rice and a little bit in the center.
  9. Cook egg for 2-3 minutes until fluffy and cheese has melted. Top with some more seaweed! Hope you enjoy!

Ingredients

  • 2 strips pork belly or brisket any leftover protein you have

  • 1-2 green onions sliced
  • 1/4 can of spam optional
  • roasted seaweed crushed in small pieces
  • sesame seeds garnish

eggs

  • 3 eggs
  • pinch of salt and pepper
  • 1/2 cup shredded mozzarella cheese

spicy sauce

  • 3 cloves garlic minced
  • 1 tablespoon soy sauce
  • 2 tablespoon gochujang red pepper paste
  • 1 tablespoon sugar
  • 1/2 tablespoon mirin
  • 1 teaspoon sesame oil
  • 1 tablespoon fish sauce

I finally finished testing out this recipe (it’s beeen a few months haha)! I was struggling with the texture for a little while. Now, the recipe is good to go ◡̈  The flavor is very savory from the chinese sausage and cured pork belly (made from my dad!) and also sweet from the radish. The texture is firm but not too doughy because I loaded this up with lots and lots of radish. You will never find a restaurant that has as much radish as this homemade recipe. Lastly, I pan fried the turnip cake to give it a nice crisp at the end. 

Don’t forget Chinese New Year is celebrated on the eve (21st of January!) so have a nice dinner with your family on Saturday. Then my mom told me to not clean or do any labor on actual Chinese New Years Day (22nd of January). Wishing all you dumplings good health and wealth in the upcoming year.

This egg drop soup is inspired by my parent’s Ch This egg drop soup is inspired by my parent’s Chinese restaurant 😋Silken tofu is cooked in a sweet chicken broth and cornstarch slurry is added to thicken the soup as well as make the smooth & thick texture. 

Some Cantonese restaurants serve this with real crab meat (highly recommend if you have this!) and the color is on the whiter end (hence why we’re using egg whites!). However, if you want to use the whole egg, feel free to use it! The egg yolk makes the soup more yellow and creamy.

Fridge clean out time! 🙃 Crab jeon (omelette) o Fridge clean out time! 🙃 Crab jeon (omelette) or korean seafood pancake is a great recipe to use all your leftover ingredients in the fridge. For groceries, I always use the ‘first in, first out’ method meaning the older groceries need to be used before eating the new stuff. I’m chopping up leftover vegetables and onions in small pieces and mixing them together with imitation crab. The pancake may taste different depending on what ingredients you have but once you mix it with eggs and some flour (especially korean pancake mix!), it will taste scrumptious in it’s own unique way. 

The next time you stock up, make sure to keep some type of seafood in the freezer at all times. For me, I tend to buy extra imitation crab and shrimp. Then you will always have good staples to make with your leftover ingredients.

My uncle taught me how to make braised pork over r My uncle taught me how to make braised pork over rice! This dish tastes sweet and savory (similar to teriyaki) which goes so well with rice. The recipe is inspired by Japanese soboro don which is served with scrambled egg, but I think it also reminds me of the Taiwanese dish, Lu rou fan. We cook the ground pork down in some beer to make the meat taste sweeter as well as cut down on the gaminess.

You’re about to eat 2 bowls of rice with this ea You’re about to eat 2 bowls of rice with this easy and delicious mapo tofu! This is spicy, flavorful and a little tingly from the peppercorn oil. This is not an authentic replica of the sichuan mapo tofu but it’s very close. I would say the dish is a combo of sichuan and cantonese flavors 😍
My uncle taught me how to make this and it’s one of my favorite recipes to cook when I don’t have a lot of ingredients in the fridge. Also eating spicy and hot foods when it’s cold outside always makes me happy for some reason. Check full recipe in the blog or link in bio 🥵❤️‍🔥🌶
