This is a savory and buttery noodle dish with crispy panko at the top! These butter dashi noodles take less than 15 minutes to prepare. I was inspired by this dish when I traveled a NYC restaurant called Tuome. At Tuome, they made a crab and butter noodle.

I wanted to make something cheaper and quicker. Udon is always my go to when I want to make something fast. Add a little butter and shrimp & you have a tasty meal!

Ingredients you need for your butter dashi udon:

  • 2 packs of udon noodles
  • 8 pcs of shrimp (de-veined and peeled), optional if you want seafood
  • 2.5 tbs unsalted butter
  • 1 tbs soy sauce
  • 1/2 tsp instant dashi
  • 1/2 tbs finely minced garlic (2-3 cloves)
  • 1 egg yolk (no egg white)
  • 1/2 cup of panko bread crumbs & 1 tbs oil (to make crispy panko!)
  • 1/2 green onion for garnish

Steps to make the butter dashi udon:

  • Step 1. Boil udon noodles for one minute. Take noodles out of water and wash under cold water & ice. The udon should be slightly undercooked so when you cook with the sauce, its not too soft. Cooking tip: If you like saucier noodles, save some of the udon broth. You can add 2-4 tbs of udon broth to step 4 when making the sauce.
  • Step 2. To toast the panko bread crumbs: On a low-medium pan, add 1 tbs of oil. Then, add 1/2 cup panko bread crumbs and frequently stir until the bread crumbs turn a golden brown. This step should take 2-4 minutes.
  • Step 3. On medium heat, add 2.5 tablespoons butter to a pan. Add shrimp and a pinch of salt. Cook until shrimp is orange or cooked all the way through and set aside. Be careful not to burn the butter (when the butter turns dark brown, its burnt and you will need to add 2 tbs butter to the pan again).
  • Step 4. Quickly, add 1/2 tablespoon minced garlic to the butter and stir. Add udon noodles, 1 tablespoon soy sauce, and 1/2 teaspoon instant dashi. Mix the shrimp in. This step should take one minute so the udon noodles don’t get too soft/soggy.
  • Step 5. Turn off heat and wait one minute. Add egg yolk to the pan of noodles and stir quickly. The egg yolk makes the udon noodles creamy and silky!
  • Step 6. Top with toasted panko bread crumbs and sliced green onions. Hope you enjoy!

Ingredients

  • 2 packs udon noodles
  • 8 pieces shrimp peeled and de-veined
  • 2½ tablespoons unsalted butter
  • 1 tablespoon soy sauce
  • ½ teaspoon instant dashi
  • 2-3 garlic cloves finely minced
  • 1 egg yolk no egg white
  • ½ cup panko bread crumbs
  • 1 tablespoon canola oil or vegetable oil use oil to fry with panko
  • ½ green onion for garnish

I finally finished testing out this recipe (it’s beeen a few months haha)! I was struggling with the texture for a little while. Now, the recipe is good to go ◡̈  The flavor is very savory from the chinese sausage and cured pork belly (made from my dad!) and also sweet from the radish. The texture is firm but not too doughy because I loaded this up with lots and lots of radish. You will never find a restaurant that has as much radish as this homemade recipe. Lastly, I pan fried the turnip cake to give it a nice crisp at the end. 

Don’t forget Chinese New Year is celebrated on the eve (21st of January!) so have a nice dinner with your family on Saturday. Then my mom told me to not clean or do any labor on actual Chinese New Years Day (22nd of January). Wishing all you dumplings good health and wealth in the upcoming year.

This egg drop soup is inspired by my parent’s Ch This egg drop soup is inspired by my parent’s Chinese restaurant 😋Silken tofu is cooked in a sweet chicken broth and cornstarch slurry is added to thicken the soup as well as make the smooth & thick texture. 

Some Cantonese restaurants serve this with real crab meat (highly recommend if you have this!) and the color is on the whiter end (hence why we’re using egg whites!). However, if you want to use the whole egg, feel free to use it! The egg yolk makes the soup more yellow and creamy.

Fridge clean out time! 🙃 Crab jeon (omelette) o Fridge clean out time! 🙃 Crab jeon (omelette) or korean seafood pancake is a great recipe to use all your leftover ingredients in the fridge. For groceries, I always use the ‘first in, first out’ method meaning the older groceries need to be used before eating the new stuff. I’m chopping up leftover vegetables and onions in small pieces and mixing them together with imitation crab. The pancake may taste different depending on what ingredients you have but once you mix it with eggs and some flour (especially korean pancake mix!), it will taste scrumptious in it’s own unique way. 

The next time you stock up, make sure to keep some type of seafood in the freezer at all times. For me, I tend to buy extra imitation crab and shrimp. Then you will always have good staples to make with your leftover ingredients.

My uncle taught me how to make braised pork over r My uncle taught me how to make braised pork over rice! This dish tastes sweet and savory (similar to teriyaki) which goes so well with rice. The recipe is inspired by Japanese soboro don which is served with scrambled egg, but I think it also reminds me of the Taiwanese dish, Lu rou fan. We cook the ground pork down in some beer to make the meat taste sweeter as well as cut down on the gaminess.

You’re about to eat 2 bowls of rice with this ea You’re about to eat 2 bowls of rice with this easy and delicious mapo tofu! This is spicy, flavorful and a little tingly from the peppercorn oil. This is not an authentic replica of the sichuan mapo tofu but it’s very close. I would say the dish is a combo of sichuan and cantonese flavors 😍
My uncle taught me how to make this and it’s one of my favorite recipes to cook when I don’t have a lot of ingredients in the fridge. Also eating spicy and hot foods when it’s cold outside always makes me happy for some reason. Check full recipe in the blog or link in bio 🥵❤️‍🔥🌶
