    Cheung fun (腸粉) – HK Rice Noodles

    Hong Kong (HK for short) rice noodles are known as Cheung fun (腸粉) in Cantonese. Cheung Fun is a popular street snack in Hong Kong and is often served as a dim sum item. The rice noodles has many layers of noodle sheets inside so the texture is super soft. You may have seen an alternative version where these rice noodles are sautéed with XO sauce. Its call XO sauce rice noodles served in a clay pot. That might be a recipe for another day 😉

    The rice noodles don’t taste like anything. Depending on what sauces you add, the noodles will pick up the delicious flavors and when mixed becomes a delicious meal! I recommend to combine all the sauces (XO sauce, peanut butter, hoisin, oyster and soy sauce) on these delicious rice noodles for a creamy, savory and sweet flavor. Eat with skewer sticks for the ultimate Hong Kong street food experience.

    Where to Buy Cheung Fun (Rice Noodles)

    You can buy these rice noodles at most Asian (Chinese or Vietnamese is your best shot!) grocery stores like 99 Ranch. They are prepared fresh (not refrigerated) and stored with other rice noodles (flat noodles, pho noodles, and more!) near the refrigerated tofu section. Usually they come plain (no fillings), but I also like to get the rice noodles that are filled with dried shrimp and green onions. Unfortunately, I haven’t found a good alternative for these rice noodles. What makes them delicious is that they are made fresh with rice & tapioca flour, which gives them a soft and bouncy texture. Most noodles we find in the western markets are made from flour and eggs, which are chewier (from the flour and eggs) like pasta!

    Ingredients You Need For Your Cheung Fun:

    Steam

    • 1 pack rice noodle rolls
    • 1 tbs olive oil
    • 1 tbs oyster sauce

    Peanut sauce:

    • 2 tbs creamy peanut butter
    • 3-4 tbs water, slowly mix in*
      • *adjust to how thick and thin you like your peanut sauce

    Sauce toppings (add as much sauce as you like):

    • hoisin sauce (be careful to not add too much or else it gets really sweet!)
    • peanut butter sauce
    • soy sauce
    • xo sauce
    • green onions, sliced
    • toasted sesame seeds

    Steps to Make the Cheung Fun

    1. Cut rice noodles in 3 inch pieces. Add them on a plate and pour 1 tbs oil and 1 tbs oyster sauce on top.
    2. In a large pot, boil water and place steaming tray. Once the water is boiling, add your rice noodle plate to steam. Steam for 5-8 minutes until rice noodles are hot.
    3. To make peanut butter sauce, add 2 tbs peanut butter in a bowl. Slowly mix in 1 tbs of water (up to 4 tbs) in the peanut butter until its your desired consistency. It should be smooth without clumps!
    4. Next, add some soy sauce, peanut butter sauce, and hoisin sauce to the rice noodles. Be careful not to add too much hoisin sauce or else it gets too sweet. Measure with your heart because there’s not a right amount of sauce 😉 If you have XO sauce, add some on top for super delicious umami flavor.
    5. Garnish with sesame seeds and green onions if you like. Hope you enjoy this HK classic!
